# Cooking Tips:

01 -
  • The fruit and spice balance creates that magical flavor profile you crave from curry houses but rarely achieve at home
  • It comes together in under an hour with ingredients you probably already have sitting in your pantry
02 -
  • Dont skip browning the sausages first because that caramelization creates depth of flavor you cant get any other way
  • The yogurt can curdle if you add it too early or boil it vigorously, so stir it in gently at the very last moment
03 -
  • Let the curry rest for 10 minutes off the heat before serving to allow the sauce to thicken and flavors to settle
  • If the sauce is too thin, mash a few pieces of cooked carrot against the side of the pan to naturally thicken it
