Sweet glazed carrots roasted until tender and golden. An effortless side with honey and herbs.

# What You'll Need:

→ Fresh Produce

01 - 1 lb carrots, peeled and cut into sticks or rounds

→ Dressing

02 - 2 tbsp olive oil
03 - 2 tbsp honey
04 - 1/2 tsp salt
05 - 1/4 tsp black pepper

→ Herbs

06 - 1 tbsp fresh thyme or parsley, chopped

# Directions:

01 - Preheat the oven to 425°F. Line a baking sheet with parchment paper.
02 - In a large bowl, whisk together olive oil, honey, salt, and pepper until well combined.
03 - Add the carrots to the bowl and toss thoroughly to ensure even coating with the honey mixture.
04 - Spread the carrots in a single layer on the prepared baking sheet, ensuring pieces are not overcrowded.
05 - Roast for 20 to 25 minutes, stirring once halfway through cooking, until carrots are tender and edges are lightly caramelized.
06 - Transfer to a serving dish and sprinkle with fresh herbs if desired. Serve warm.

# Cooking Tips:

01 -
  • The honey creates these gorgeous caramelized edges that make carrots taste like candy but in a sophisticated way
  • Theyre practically foolproof even if youve never roasted vegetables before
  • The prep takes ten minutes and then your oven does all the work
02 -
  • Cutting carrots into similar sizes ensures they all finish cooking at the same time
  • The honey can burn if your oven runs hot or if you roast too long, so check at the 20 minute mark
  • These reheat surprisingly well in a 350°F oven for about 10 minutes if you need to make them ahead
03 -
  • Room temperature honey is much easier to work with than cold honey straight from the pantry
  • If your carrots are really thick, cut them in half lengthwise before slicing into pieces
  • Letting them rest for a few minutes after roasting helps the flavors develop even more
