# Directions:

01 - Pat chicken thighs dry with paper towels. Rub evenly with salt, black pepper, smoked paprika, dried thyme, and oregano, ensuring full coverage.
02 - Heat olive oil in a large skillet over medium-high heat. Sear seasoned chicken for 2-3 minutes per side until golden brown. This step enhances flavor depth.
03 - Layer carrots, celery, diced onion, minced garlic, and halved baby potatoes in the bottom of the slow cooker insert.
04 - Arrange seared chicken pieces on top of the vegetable bed. Pour chicken broth evenly over all ingredients. Tuck bay leaves into the liquid.
05 - Cover and cook on LOW setting for 6 hours until chicken reaches internal temperature of 165°F and vegetables are tender.
06 - Discard bay leaves. Taste sauce and adjust seasoning with salt and pepper if needed. Add lemon juice for brightness if desired. Garnish generously with chopped fresh parsley.

# Cooking Tips:

01 -
  • The chicken becomes impossibly tender without you having to babysit a stove
  • One pot means almost zero cleanup which is basically a weeknight miracle
  • The sauce that develops in the bottom is worth making this recipe alone
02 -
  • Searing might feel unnecessary but it creates flavor compounds that slow cooking alone simply cannot achieve
  • Resist the urge to lift the lid during cooking every peek adds 15-20 minutes to the total time
  • The sauce will look thin at first but letting it rest for 5 minutes after cooking helps it thicken naturally
03 -
  • Pat the chicken absolutely dry before seasoning or the spices will slide right off during searing
  • Use fresh thyme and oregano if you can find them they bloom differently than dried versions
