Creamy Potato Soup Chives (Printable)

07 - 1 cup whole milk
08 - 1/3 cup heavy cream

13 - 4 tbsp fresh chives, finely chopped

# Directions:

01 - Melt butter in a large pot over medium heat. Add onion, garlic, celery, and carrot. Sauté for 5 minutes until softened but not browned.
02 - Add diced potatoes to the pot and stir for 2 minutes to coat with butter and vegetables.
03 - Pour in vegetable broth and bring to a boil. Reduce heat and simmer for 20 minutes, or until potatoes are fork-tender.
04 - Use an immersion blender to puree until smooth and creamy. Alternatively, carefully blend in batches using a countertop blender.
05 - Stir in milk and heavy cream. Gently heat for 5 minutes without boiling. Season with salt, pepper, and nutmeg to taste.
06 - Ladle into serving bowls. Garnish with fresh chives and a drizzle of cream, if desired.
