# What You'll Need:

→ Chicken

01 - 4 boneless, skinless chicken breasts (approximately 5.3 oz each)
02 - 1/2 teaspoon salt
03 - 1/4 teaspoon black pepper
04 - 2 tablespoons all-purpose flour (gluten-free optional)

→ Sauce

05 - 2 tablespoons olive oil
06 - 2 tablespoons unsalted butter
07 - 9 ounces cremini or white mushrooms, sliced
08 - 6 garlic cloves, minced
09 - 1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)
10 - 2/3 cup chicken stock
11 - 3/4 cup plus 1 tablespoon heavy cream
12 - 1/3 cup grated Parmesan cheese
13 - 2 tablespoons chopped fresh parsley

# Directions:

01 - Pat chicken breasts dry and season both sides with salt and pepper. Lightly dust with flour and shake off excess.
02 - Heat olive oil and 1 tablespoon butter in a large skillet over medium-high heat. Sear chicken 5-6 minutes per side until golden and nearly cooked through. Remove and keep warm.
03 - Reduce heat to medium and add remaining butter to the skillet. Sauté mushrooms for 4-5 minutes until browned and softened.
04 - Stir in garlic and thyme, cooking for 1 minute until fragrant.
05 - Pour in chicken stock, scraping up browned bits. Simmer for 2 minutes.
06 - Add cream and Parmesan, bringing to a gentle simmer. Cook 2-3 minutes until slightly thickened.
07 - Return chicken and juices to skillet. Simmer gently 5-7 minutes until chicken is fully cooked and sauce is creamy.
08 - Stir in chopped parsley and adjust seasoning as desired.
09 - Plate and garnish with additional parsley. Serve hot.
