Beef Cheese Pickles Sliders (Printable)

Mini beef patties with melted cheese and tangy pickles on soft buns, ideal for casual meals or parties.

# What You'll Need:

→ Beef Patties

01 - 1.1 lb ground beef, 80/20 blend
02 - 1 tsp kosher salt
03 - ½ tsp freshly ground black pepper
04 - ½ tsp garlic powder

→ Toppings & Assembly

05 - 8 slices cheddar or American cheese
06 - 8 slider buns
07 - 16–24 dill pickle slices
08 - 2 tbsp unsalted butter, melted
09 - ½ small red onion, thinly sliced
10 - 2 tbsp ketchup
11 - 2 tbsp mayonnaise

# Directions:

01 - Preheat a grill, grill pan, or skillet to medium-high heat.
02 - Combine ground beef, salt, pepper, and garlic powder in a mixing bowl. Divide into 8 equal portions and shape into patties approximately 2.5 inches in diameter.
03 - Lightly brush cut sides of slider buns with melted butter. Toast cut side down on the grill or skillet until golden, 1–2 minutes. Set aside.
04 - Cook patties 2–3 minutes on the first side. Flip, top each with cheese, and cook 2 minutes more until melted and cooked to desired doneness.
05 - Spread mayonnaise and ketchup on bun bottoms if desired. Place patties, add pickles and optional onion, then top with remaining bun halves.
06 - Serve warm while cheese is still melted.

# Cooking Tips:

01 -
  • These disappear faster than you can explain what 80/20 blend means to curious guests
  • The butter-toasted buns create that diner-style crunch that makes people close their eyes on first bite
02 -
  • Pressing a dimple into the center of each raw patty prevents the dreaded burger dome that slides toppings onto your plate
  • Cold cheese straight from the fridge will not melt properly, let it sit out while you prep everything else
03 -
  • Freeze formed patties between parchment squares for impromptu gatherings, they cook straight from frozen with two extra minutes per side
  • A squirt of yellow mustard mixed into the raw beef adds subtle tang and helps bind the meat without breadcrumbs
