04 - 1 tsp Worcestershire sauce

05 - 2 large yellow onions, thinly sliced
06 - 1 tbsp unsalted butter
07 - 1 tbsp olive oil
08 - ½ tsp sugar
09 - Pinch of salt

→ For the Sautéed Mushrooms

10 - 8 oz cremini or white mushrooms, sliced
11 - 1 tbsp unsalted butter
12 - 1 clove garlic, minced
13 - Salt and pepper, to taste

→ For Assembly

14 - 4 burger buns, toasted
15 - 4 slices Swiss or provolone cheese
16 - 2 tbsp mayonnaise (optional)
17 - 4 lettuce leaves (optional)
18 - 4 tomato slices (optional)

# Directions:

01 - In a large skillet over medium heat, combine butter and olive oil. Add onions, sprinkle with sugar and a pinch of salt. Cook, stirring occasionally, for 20–25 minutes until deep golden brown and very soft. Remove from skillet and set aside.
02 - In the same skillet, add butter and mushrooms. Cook over medium-high heat for 5–7 minutes until browned and tender. Add garlic, cook for 1 more minute, and season with salt and pepper. Set aside.
03 - In a bowl, mix ground beef with salt, pepper, and Worcestershire sauce. Form into 4 equal patties, slightly larger than the buns.
04 - Heat a grill or skillet over medium-high heat. Cook patties for 3–4 minutes per side for medium doneness. During the last minute, place a cheese slice on each patty and cover to melt.
05 - Lightly toast burger buns on the grill or in a toaster.
06 - Spread mayonnaise on the bottom buns if desired. Add lettuce and tomato, then the beef patty. Top with caramelized onions and mushrooms. Finish with the top bun. Serve immediately with your favorite sides.

# Cooking Tips:

01 -
  • The slow-cooked onions become candy-like and melt into the beef for layers of sweet and savory
  • Mushrooms add an earthy richness that makes this feel like a restaurant quality burger
02 -
  • The onions need at least 20 minutes to develop proper flavor, and rushing them leaves them sharp and bland
  • Do not press down on the patties while they cook or you will lose all those delicious juices
03 -
  • A splash of balsamic vinegar in the onions during the last 5 minutes adds incredible depth
  • Keep the skillet moving when cooking mushrooms so they brown instead of steam
