Baked Feta Potatoes Lemon (Printable)

Golden potatoes with tangy feta, fresh herbs, and zesty lemon create a vibrant Mediterranean side dish.

# What You'll Need:

→ Vegetables

01 - 1.5 lbs baby potatoes, halved
02 - 1 medium red onion, cut into wedges

→ Dairy

03 - 7 oz feta cheese, cut into large cubes

→ Citrus & Aromatics

04 - 1 large lemon, zest and juice
05 - 3 garlic cloves, minced

→ Herbs & Seasoning

06 - 3 tbsp olive oil
07 - 2 tsp dried oregano
08 - 1 tbsp fresh parsley, chopped
09 - 1/2 tsp black pepper
10 - 1/4 tsp chili flakes
11 - Salt, to taste

# Directions:

01 - Preheat the oven to 400°F. Lightly grease a large baking dish or sheet pan with olive oil or cooking spray.
02 - In a large bowl, combine halved potatoes, red onion wedges, olive oil, lemon zest, lemon juice, minced garlic, dried oregano, black pepper, chili flakes, and salt. Toss thoroughly until all vegetables are evenly coated.
03 - Spread the seasoned potato mixture evenly across the prepared baking dish, ensuring vegetables are in a single layer for proper roasting.
04 - Scatter the feta cheese cubes over the top of the potato mixture, distributing them evenly throughout the dish.
05 - Bake for 35-40 minutes, stirring the potatoes once halfway through cooking. Continue until potatoes are tender when pierced with a fork, golden brown, and the feta has softened and slightly browned on the edges.
06 - Remove from the oven and immediately sprinkle with fresh chopped parsley. Serve warm while the feta is still creamy and the potatoes are at their peak flavor.

# Cooking Tips:

01 -
  • The feta becomes this incredible salty, creamy element that melts into the potatoes just enough to coat them in flavor while still keeping those delicious golden edges intact.
  • Everything happens on one pan with minimal prep, making it perfect for those nights when you want something impressive but absolutely effortless.
02 -
  • Dont skip stirring halfway through, or youll end up with some potatoes perfectly golden while others stay pale and steamed.
  • The feta will brown more than you expect, and that's actually a good thing, those crispy edges are where all the flavor concentrates.
03 -
  • Use a baking sheet with low sides instead of a deep dish, the air circulation helps everything crisp up better than when crowded in a deep pan.
  • Let the dish rest for 5 minutes after baking, the feta firms up slightly and makes serving much easier than trying to scoop it immediately.
