01 - 2 cups cooked chicken breast, diced or shredded

03 - 1 cup cherry tomatoes, halved

06 - 1 small cucumber, diced (optional)

# Directions:

01 - In a small bowl, whisk together the fresh lime juice, olive oil, minced garlic, salt, and black pepper until well combined. Set aside.
02 - In a large mixing bowl, combine the diced or shredded chicken, avocados, cherry tomatoes, red onion, cilantro or parsley, and cucumber if using.
03 - Pour the prepared dressing over the salad and gently toss to coat all ingredients evenly, being careful not to mash the avocado pieces.
04 - Arrange a bed of mixed greens or lettuce on plates and mound the avocado chicken salad on top. Serve immediately.
